As is my custom, I made a Sunday feast tonight for Collin and I, and honestly it was one of the best meals I’ve ever made if I do say so myself. I used all of my farmer’s market produce and made a veggie-filled extravaganza!
Clockwise: Arugula, spinach, chickpeas, and garden fresh grape tomatoes with basil almond pesto, avocado potato salad, broiled brussel sprouts in red wine vinegar and grilled corn on the cob.
There aren’t many things I enjoy more than cooking seasonal, fresh produce and always finding new, exciting ways to prepare classic ingredients. I always love to cook, but I genuinely had so much fun cooking this meal! Enjoying the process makes eating your hard work all the more rewarding and I think the food tastes better that way, too!
